I don't know about you but I love me a good cookie and this recipe is one of the best I have ever tried! Usually I stick to my tried and tested chocolate chip recipe but the other day I had a craving for peanut butter and came across this recipe on Six Sister's Stuff. Not only did I get my peanut butter fix but they also were very filling. Unlike when I make chocolate chip cookies and they are gone the next day these cookies actually lasted over a week and were super moist even on the last day. One or two will make you feel full so these are great to make when you want to have snacks for the kids after school for a week or if you need to make a treat for a lot of people. And they have to be somewhat healthy because they have oatmeal in them right?!
Ingredients:
1/2 cup (1 stick) butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 teaspoon vanilla extract
1 egg
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt (I used salted butter so I omitted the salt and they still tasted great)
1/2 cup oats
2 cups chocolate chips
Directions:
Preheat oven to 350°
Combine butter and sugars.
Stir in peanut butter, vanilla and egg.
In a second bowl combine flour, baking soda and salt.
Combine flour mixture with wet ingredients and stir well.
Fold in oats and chocolate chips.
Place by the spoonful on a greased cookie sheet and bake for 10-12 minutes, or until golden brown on top.
This batch made about 4 dozen cookies. Yours might be different depending on how big your spoonfuls are.
